Plum Sauce

- 6 lbs egg plums
- 3 pints vinegar
- 1 tblsp salt
- 1 tblsp cloves
- 1 lb onions
- 3 lbs sugar
- 1 tsp cayenne
- 1 tblsp spice
- 1 tblsp whole ginger (bruised)
Boil all ingredients together for one hour, then strain through a colander, and bottle when cold.
